Ingredients
- 3 to 4 Organic Eggs
- 1/2 Maui Onion
- 2 cloves of Garlic
- 1/2 Green Bell Pepper
- 1/2 cup Mushrooms
- 1 teaspoon of baking powder
- 2 one inch cubes of Feta Cheese
- 250 grams of butter
- Italian Olive Oil
- 1/2 Orange
- Topping
- 1/2 Avocado
- 1/2 Tomato
- 1/2 oz. Parsley
- 4 to 6 mint leaves

Instructions
- In medium frying pan, heat olive oil. When hot(never let oil smoke/burn) over medium flame pour in egg beat mixed with squeezed 1/2 orange juice onto pan.
- When egg beat becomes almost firm, add chopped garlic, peppers, onions, mushrooms, then sprinkle feta cheese over cooking mixture
- Fold/flip egg mixture in half (you can use clear glass lid to cover to trap steam for 7 to 10 seconds) then remove and dish the omelet
- For decoration and extra flavor, place 1/2 Avocado(sliced thinly), 1/2 Tomatoes(sliced thinly), sprinkle 1/2 oz. chopped Parsley on top of the omelet, 4 to 6 mint leaves around your plate's borders
- You may enjoy it with fresh fruit juice. Bon' Appetite!
